Breakfast Burrito

I just threw this together this morning because I had a little bit of extra time and I felt like experimenting. Oh, my goodness! I think I might have a new morning favorite!! The combination of the creamy cheese and the turkey bacon is amazing and the tortilla is just stuffed to the gills–it is so filling! And only 4 points! Yum! (Sorry…way too many exclamation points…I’ll try to refrain myself next time.)
  • 1/4 red bell pepper, chopped
  • 1/4 small onion, chopped
  • 5 button mushrooms, chopped
  • 1/2 cup Southwestern Eggbeaters (If have regular Eggbeaters or eggs, add a shake or two of Tobasco and a dash of cumin and chili powder–it adds a great little kick!)
  • salt and pepper to taste
  • 1 slice turkey bacon, cooked and crumbled
  • 1 wedge Laughing Cow Light Creamy French Onion cheese
  • 1 tortilla (I used a 1-point flour tortilla)
  • salsa (I used homemade)
Spray frying pan with cooking spray. Saute pepper, onion and mushrooms over medium heat until soft, about 3 to 4 minutes. Add Eggbeaters and season with salt and pepper. Let cook for 1 to 2 minutes, then gently stir until set. Meanwhile, spread the cheese on the tortilla. Sprinkle the turkey bacon down the middle of the tortilla and top with the eggs. Roll up tortilla and serve with salsa.
