Colorful Summer Salsa Recipe



Sometimes I make salsa based on a craving for a spicy kick. Sometimes I just want to go fresh and light. Sometimes I want sweet and fruity. Sometimes roasted and caramelized.
And sometimes….I just want some fresh color!!! :)
Yes, I admit my method for making this one was literally — to see how many colors I can fit into one recipe! With so much beautiful, ripe, colorful produce to choose from this time of year, it definitely was not hard. And thankfully — since all of these ingredients go perfectly in salsa anyway, it turned out to be incredibly delicious! Definitely a yummy take on the lighter, fresher, chunkier side of salsa-making.

Colorful Summer Salsa Recipe
Ingredients:
  • 1 red bell pepper, seeded and diced
  • 1 orange bell pepper, seeded and diced
  • 1 yellow bell pepper, seeded and diced
  • 1 avocado, peeled, pitted and diced
  • 1 jalapeno, stem removed, seeded and diced
  • 1 lb. tomatoes, seeded and diced
  • 1/2 cup corn kernels
  • 1/2 red onion, diced
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp. cumin
  • 1/2 tsp. salt
  • juice of one lime
Method:
Combine all ingredients together in a bowl, and stir until the lime juice and cumin are evenly distributed. Serve immediately.
Ali’s Tip:
If you’re making this more than an hour in advance, just be sure to wait until just before serving to add the avocado so that it doesn’t go brown.  http://gimmesomeoven.com/colorful-summer-salsa/
