Take out your muffin pans, and make some ham and eggs!!! This simple, but everyone's favorite breakfast entrée is transformed into cups of fun for kids of all ages.

Actually, the Family Circle issue I got this idea from was not so outdated, and yes, I did wait for a long, long time, urgh!

It is rather easy though, all you need is a muffin pan (ramekins will do), cooking spray, ham slices, cheese, whatever else you would like to put in, scallions were not an option for my kids : ) , seasonings, eggs, and just bake it.
I like it for various obvious reasons, and mostly because it is so easy to quickly assemble a pan full of these, pop them in the oven, and be free to make some sides. No grease everywhere and it’s so presentable. It is so great when you have guests, because you can make a lot in no time, just make some hash browns, and whatever else, and you are set.
