Come Party With Me: Summer Cocktail — Dessert

This Friday a group of friends will be gathering in my sister's garden for an informal Summer cocktail party. Since the entire savory menu consists of delicious bite-sized finger food, the theme should carry over to the desserts. That's why an assortment of mini tartlets will make up the dessert selection. In this recipe, the tartlet crust is homemade, and the shells are filled with store-bought lemon curd. However, feel free to get creative with the shells: vanilla custard, chocolate pudding, or cheesecake batter would be delicious fillings. To get the basic recipe, read more.

Mini-Tarts
From Williams-SonomaMini-Tarts Ingredients
1 1/4 cups all-purpose flour
1/3 cup confectioners' sugar
1/2 tsp. salt
10 Tbs. (1 1/4 sticks) chilled unsalted butter,
 cut into pieces
2 egg yolks, lightly beaten with 1 Tbs. water
1 jar (28 oz.) lemon curd filling
Whipped cream, meringue, fresh fruit or
 candied ginger for garnish
Directions
  1. In the bowl of a food processor, combine the flour, sugar and salt and pulse once to mix. Add the butter and process in short pulses until pea-size crumbs form, 20 to 25 seconds. While pulsing, add the egg yolk mixture and process until large, moist crumbs form, 10 to 15 seconds more.
  2. Turn the dough out onto a lightly floured surface, shape the dough into a ball and divide it in half. Shape each half into a flat, 5-inch disk, cover with plastic wrap and refrigerate for at least 1 hour.
  3. Position a rack in the center of an oven and preheat to 400ºF.
  4. Working with one piece of dough at a time, roll out to 1/4-inch thickness. Using a 3-inch round cookie cutter, cut out 12 rounds. Transfer a round to each well of a 12-well mini-tart plaque or mini-muffin pan.
  5. Using your fingers, press the pastry to fit into the well. Bake until the tart shells are evenly golden and crisp, 18 to 22 minutes. Transfer the pan to a wire rack and cool for 5 minutes, then remove the tart shells from the pan and cool to room temperature.
  6. Fill each tart shell with 1 1/2 Tbs. tart filling. Garnish with whipped cream, meringue, fresh fruit or candied ginger.

Make Your Own Lemon Curd

It's luscious, it's smooth, it's tart, it's sweet, it's lemon curd! Although you can purchase this sunny condiment at most supermarkets, it's quite simple and very satisfying to make at home. It takes time to zest and juice the lemons, so be sure to start a day before you plan on serving the curd. There are tons of ways to use lemon curd, you can spread it on toast, stir into yogurt, drizzle over pound cake, or spoon, and enjoy as is. If kept in an airtight container in the fridge, fresh lemon curd will keep for up to a month. It's also a delightful edible gift. To learn how to make this bright spread, read more.

Lemon Curd
From Rachael RayLemon Curd Ingredients
2 cups sugar
1 cup fresh lemon juice (about 6 lemons)
4 large eggs plus 4 large yolks, beaten
1/4 cup finely grated lemon peel (about 3 lemons)
1 1/2 sticks (6 ounces) unsalted butter, cut into pieces
Directions
  1. Set a fine-mesh strainer over a medium heatproof bowl next to the stove. In a heavy, medium saucepan, whisk together the sugar, lemon juice, eggs, egg yolks and lemon peel. Add the butter and cook over medium-low heat, stirring constantly, for 5 minutes.
  2. Lower the heat and simmer, stirring, until the mixture thickens and registers 160° on an instant-read thermometer, about 5 minutes.
  3. Strain the mixture into the prepared bowl, then press a sheet of plastic wrap directly onto the surface. Let cool to room temperature. Transfer to an airtight container and refrigerate for up to 1 month.

A Delicious Dessert: Lemon Ripple Cheesecake

Cheesecake
At the last minute, I decided not to make the white chocolate-lime cheesecake bars for my half birthday party. Instead, I opted for these lemon ripple bars. Lemon seemed to evoke the flavors of Spring more than lime and white chocolate. I cut them into small, bite-sized pieces and they went like hot cakes at the party!
This easy-to-follow recipe is divine. The crust is flecked with lemon zest and lemon curd is rippled with the creamy cheesecake filling. They are wonderful for a party because you can make them one or two days before the event. For the recipe, read more.

Lemon Ripple Cheesecake Bars
From Food & Wine magazineLemon Ripple Cheesecake Bars Ingredients
Crust
1 cup all-purpose flour
1/4 cup sugar
1 teaspoon finely grated lemon zest
1/8 teaspoon salt
1 stick (4 ounces) unsalted butter, cut into 1/2-inch pieces and chilled
Filling
1 tablespoon plus 2 teaspoons cornstarch
1/2 cup cold water
2 large egg yolks
1 3/4 cups sugar
1/4 cup fresh lemon juice
1 teaspoon finely grated lemon zest
1 1/4 pounds cream cheese, softened
2 tablespoons all-purpose flour
3 large eggs, at room temperature
1/4 cup sour cream
1 teaspoon pure vanilla extract
Directions
  1. Make the crust: preheat the oven to 325°F and position a rack in the center. Butter a 9-inch-square nonstick baking pan.
  2. In a food processor, pulse the flour with the sugar, lemon zest, and salt. Add the butter and pulse until a soft, crumbly dough forms.
  3. Press the dough evenly over the bottom and a scant 1/2 inch up the side of the pan. Bake the crust for 20 minutes, or until golden and firm.
  4. Meanwhile make the filling: in a small bowl, dissolve the cornstarch in the water.
  5. In a medium sauce pan, whisk the egg yolks with 3/4 cup of the sugar and the lemon juice. Whisk in the cornstarch mixture and cook over moderate heat, whisking gently, until the sugar is dissolved and the lemon mixture is hot, about 4 minutes. Boil over moderately high heat for 1 minute, whisking constantly, until the mixture is thick and glossy. Strain the lemon mixture into a heatproof bowl. Stir in the lemon zest and let cool.
  6. In a large bowl, using an electric mixer, beat the cream cheese with the remaining 1 cup of sugar until smooth.
  7. Beat in the flour until blended. Add the eggs, 1 at a time, beating well between additions. Add the sour cream and the vanilla and beat until the batter is smooth. Pour the cream cheese batter over the crust and smooth the surface with a spatula.
  8. Dollop the lemon mixture on the cheesecake batter and carefully swirl it into the batter; take care not to cut into the crust. Use the back of a table knife to gently swirl together the lemon mixture and the cheesecake batter. Take care not to swirl too much each mixture should remain distinct so you have a lovely white and yellow pattern on top.
  9. Bake the cheesecake for about 40 minutes, or until golden around the edge and just set. Run the tip of a knife around the edge to loosen the cheesecake from the side of the pan.
  10. Let cool on a wire rack for 1 hour, then refrigerate the cheesecake until thoroughly chilled. Cut into 16 bars and serve.
Makes 16 large bars.     http://www.yumsugar.com/Delicious-Dessert-Lemon-Ripple-Cheesecake-1118620

A Royal Feast: Lemon Curd Cake

A royal wedding requires a royal meal, and if you're tuning in on Friday to watch this fairy-tale wedding, why not celebrate with traditional British food? Every feast needs dessert, and a light, tart lemon-curd cake is the perfect way to finish an evening. The flavor of the cake is reminiscent of Madeline cookies, and it's layered with a sweet and slightly sour lemon curd and topped with a simple zesty frosting. If you've never made curd, don't fear, it is surprisingly hands off. For the ultimate lemon flavor, be sure to pick up Meyer lemons. This cake is fit for a princess, and perhaps even the queen! To nosh like royalty, keep reading and get the recipe.

Lemon Curd Cake
From BBC-FoodLemon Curd Cake Ingredients
For the cake
1 lemon, zest only, grated
1 tablespoon lemon juice
1 1/2 cup self-raising flour, sifted
1 level teaspoon baking powder
6 ounce butter, at room temperature
1 cup sugar
3 eggs
For the lemon curd
1 large juicy lemon, grated zest and juice only
1/2 cup sugar
2 eggs
2 ounces unsalted butter
For the icing
1 large lemon, zest only
1/2 cup plus 2 tablespoons sifted confectioner's sugar
2-3 teaspoon lemon juice
Directions
  1. Preheat the oven to 325°F. Butter the inside of two 8-inch cake pans.
  2. Measure all the cake ingredients into a mixing bowl and beat — ideally with an electric hand whisk — until you have a smooth, creamy consistency. Then divide the mixture evenly between two 8-inch cake pans and bake them on the center shelf of the oven for about 35 minutes or until the centers feel springy when lightly touched with a little finger.
  3. While the cakes are cooking, make the lemon curd. Place the sugar and grated lemon zest in a bowl, whisk the lemon juice together with the eggs, then pour this over the sugar. Then add the butter cut into little pieces, and place the bowl over a pan of barely simmering water. Stir frequently till thickened — about 20 minutes. You don't have to stay with it — just come back from time to time to give it a stir.
  4. When the cakes are cooked, remove them from the oven and after about 30 seconds turn them out onto a wire rack. When they are absolutely cold — and not before — carefully cut each one horizontally into two using a sharp serrated knife. Now spread the curd thickly to sandwich the sponges together.
  5. For the icing, begin by removing the zest from the lemon — it's best to use a zester to get long, curly strips. Then sift the icing sugar into a bowl and gradually stir in the lemon juice until you have a soft, runny consistency.
  6. Allow the icing to stand for 5 minutes before spreading it on top of the cake with a knife, almost to the edges, and don't worry if it runs a little down the sides of the cake. Then scatter the lemon zest over the top and leave it for half an hour for the icing to firm up before serving.

Dainty Little Fruit Tarts

fruittarts_ptc.jpg
On a recent visit to the NY Cake store on 22nd St. in New York (their link doesn’t seem to be working now), I couldn’t resist purchasing a pack of assorted mini tart shells. I love the idea of having individual bite size fruit tarts that are compact and don’t require any cutting, which can be sort of a messy process. Mini tarts are so cute, to boot! I made these for a family birthday (along with a delicious green tea cake that I’ll post later), but they’re perfect for a party.
Making mini fruit tarts is a bit more time consuming and will require just a little more skill and patience than making one large tart, but the end results are worth it. They’re still relatively easy to make, and everyone will fawn over these and love you for making them! The key points I’ve learned so far are:
- As is the case with most crusts/shells, when making the sweet tart dough, avoid over-mixing the flour.
- Keep an eye on the baking, lest you end up with shells a shade too brown.
- For the pastry cream, when going for the second heating on the stove, keep stirring!
fruittarts2_ptc.jpg
I used the same recipe I posted previously for my large fruit tart.
Fresh Fruit Tart
Sweet Tart Dough (based on recipe from Desserts by Pierre Herme)
This recipe makes enough about three large tart shells (I’m not certain how many mini tarts this equates into as I’ve made them in separate batches but as an estimate, I’d say about 40 mini shells). This larger quantity is recommended because it is easier to prepare one large batch at once. The unused portions can be frozen for later use (and will come in handy for your last minute fruit tart needs!).
2.5 sticks unsalted butter, softened
1/2 cup lightly packed ground blanched almonds
1 1/2 cups confectioner’s sugar, sifted
1/2 tsp salt
1/4 tsp vanilla extract
2 large eggs, room temperature, lightly beaten
3.5 cups all purpose flour
Beat butter on low speed in the bowl of a mixer with paddle attachment. Add rest of ingredients, except flour, and blend on low speed, scraping down sides occasionally. Add flour in 3-4 additions, still on low speed, just until mixture comes together.
Divide dough into two or three discs, depending on the size needed, and wrap each in plastic. Chill/rest in refrigerator for at least 4 hours or freeze up to a month.
Grease tart shells (I used canola oil spray and that worked fine). Scoop out one tablespoon of chilled dough and press into each individual tart mold, filling it to the edges. Set on baking sheets and chill dough for about 20 minutes.
Preheat oven to 350 degrees. Place tart shells onto baking sheets and bake for about 15 minutes or until edges brown slightly. Start checking the oven a few minutes before and watch that you do not overbake. Transfer to wire rack to cool and then unmold.
Pastry Cream
(adapted from a recipe from Chad Pagano. Enough to fill 20 mini tarts.)
10oz milk
40 grams sugar
3 egg yolks
25 grams cornstarch
40 grams sugar
20 grams butter
1/2 vanilla bean, split lengthwise (optional, or 1 tsp vanilla extract)
In a saucepan, dissolve first portion of sugar in milk along with half a vanilla bean, bringing to boil. Whisk egg yolks in a bowl. Sift cornstarch and second portion of sugar into eggs and beat until smooth. Temper yolks by slowly pouring hot milk into eggs in a steady stream (to avoid cooking eggs). Transfer mixture back to saucepan and reheat until boiling. Stir constantly. When mixture comes to a boil – it will be thick – remove from heat. Stir in butter and mix until melted. Transfer to a clean bowl and chill for at least three hours.
To assemble tart, place a dollop of pastry cream in shell. Arrange sliced fruits and berries in decorative manner. The fruits can also be glazed with a watered down apricot preserve glaze or clear cake glaze. The ones shown in this post are unglazed.  http://www.prettytastycakes.com/2008/10/14/dainty-little-fruit-tarts/

I baked these mini fruit tarts for my colleagues and really gald that they like it :)
It's been quite sometime since I last baked something for them and since it's a Friday, having a little treat for them seems fabulous.
Supposed to top the tarts with peach slices too but I think I cut the strawberries and kiwi fruit a tad too huge. No space to squeeze in the peach. Lol. I tried one myself and really like the custard cream. DIY custard cream is so yummy!  http://thekwoks-viewfinder.blogspot.com/2008/03/mini-fruit-tarts.html
