Ezekiel Bread – The Legendary Loaf

Thousands of years ago, a bread recipe was inspired, recorded and lives on for our benefit. It’s based on a passage in the Bible, located in a section called the book of Ezekiel (4:9) giving it the name ‘Ezekiel Bread‘. Designed and prescribed to give the stamina needed for Ezekiel to face warfare during a famine, the passage reads as “Now go and get some wheat, barley, beans, lentils, millet, and emmer wheat, and mix them together in a storage jar. Use them to make bread for yourself during the 390 days you will be lying on your side.” (NLT).
Many people eat it as part of a weight loss program, yet the majority are eating it due to it’s nutrients; being packed with fiber and providing a complete source of amino acid, yet low in carbohydrates with around 15 net carbohydrates per slice of bread.
Making it yourself can give you the assurance of it being gluten free, using sprouted grains.

Directions
1. Measure the water, honey, olive oil, and yeast into a large bowl. Let sit for 3 to 5 minutes.
2. Stir all of the grains and beans together until well mixed. Grind in a flour mill. Add fresh milled flour and salt to the yeast mixture; stir until well mixed, about 10 minutes. The dough will be like that of a batter bread. Pour dough into two greased 9 x 5 inch loaf pans.
3. Let rise in a warm place for about 1 hour, or until dough has reached the top of the pan.
4. Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes, or until loaves are golden brown.
You can find it in the freezer section at some grocery and health food stores. (sprouted grain flours spoil quickly, so it must be stored in the freezer). The most commonly found Ezekiel Bread products are baked by Food for Life Baking Company, with a variety of additional products (bagels, muffins, flat bread, & cereal).
